As a working mom I don’t have a lot of time to cook. However, I feel that it is important that my family eat foods that are made from scratch as often as possible, because I want to know exactly what is in the food that my family is eating. One of my family’s favorite lunchbox recipes is my beef brisket stuffed sandwiches. This recipe can be made on Sunday night, wrapped in aluminum foil and placed in the refrigerator for snacks and lunches for the coming week.

Ingredients

  • A large loaf of Itallian or French Bread
  • Left over beef brisket
  • 1 medium yellow onion
  • 1 green pepper
  • Button mushrooms
  • 2 cups of left over beef gravy
  • 2 cups of cooked rice (optional)
  • Aluminum foil
  • Directions

    Start off by slicing the beef brisket into thin slices and place in a pot.

    Pour in the left over gravy and add a little water to help thin it out slightly. Stir to combine with the meat.

    Chop your onion, green pepper and mushrooms and add to the gravy. Add in the cooked rice. Cook until the meat is heated through and the veggies are cooked.

    Cut the loaf of bread in half and scoop out the bread from the bottom and top half of the loaf. Fill the loaf with your rice and meat mixture. Put the lid back on your sandwich, press down on the crust so that the bread absorbs the gravy, and then wrap it tightly in plastic wrap or aluminum foil.

    Refrigerate over night.

    Cut into slices and wrap for lunches.
