Since we are coming to the homestretch for summertime cooking I thought I’d talk about quick meals. As the summer comes to an end we all get tired of the heat and tired of cooking big meals for the family. As a cure for the end of Summer blues I’d like to share one of my favorite quick recipes for Spicy Louisiana Fried Chicken. This meal is so quick you won’t have to look at your grandfather clock to keep track of cooking times.

Spicy Louisiana Fried Chicken

Ingredients

  • 1 pound of skinless, boneless chicken breast strips
  • 1/2 cup Corn starch
  • 1/4 cup water
  • Louisiana hot sauce
  • Vegetable oil for frying
  • Directions

    Preheat your oven to 425 degrees.

    Line a cookie sheet with aluminum foil and spray it with cooking spray. Set this aside. Heat up your frying oil.

    Mix together a half cup of corn starch with a ¼ cup of water and 3 tablespoons of Louisiana hot sauce. You can add more hot sauce to the batter if you want if you like your chicken spicy or less if you prefer a mild chicken. The batter should be fluid but thick. Add more water to loosen the batter or more corn starch to thicken it.

    Coat the chicken strips with the batter and deep fry for about five minutes or until the coating is golden brown. Drain on paper towels.

    Place chicken on cookie sheet and sprinkle more hot sauce on top of each piece of chicken. Bake for 10 to 15 minutes to crisp up the coating and caramelize the hot sauce.

    If you are cooking for young kids you can eliminate the hot sauce from the recipe.
